Did you know that one cup white sugar plus two tablespoons molasses (which I keep around for adding to my homemade barbecue sauce) can be substituted for one cup of packed brown sugar? I read about this a while back on one of my freezer cooking lists, but hadn't tried it till tonight when I wanted to bake chocolate chip cookies and didn't have enough brown sugar and absolutely was not going to run to the grocery store just for brown sugar.
Well, it works. In spades. I wouldn't use the mixture to put on my oatmeal, but in a recipe it's brilliant.
