Here are two:
Gumbo-like Substance (there is no roux involved and it's cooked in a crockpot, therefore it's not "Real Gumbo" -- however, it's tasty and very easy)
Layer the following into a crockpot:
12 oz. cooked breakfast sausage links, cut into bite-sized pieces
2 cups raw chicken breast, chopped into bite-sized pieces
2 cups frozen sliced okra
1 cup onion, chopped
1/2 cup celery, chopped
4 garlic cloves, minced
a few red pepper flakes (optional, to taste)
1 16-oz. can diced tomatoes
Stir slightly to mix. Plug the crockpot in, turn it on low, leave it all day. Serve with rice.
And for dessert:
Soldiers Fudge (so named because it could be and was made during WWII sugar rationing to be shipped to soldiers overseas)
1 12-oz. bag semisweet chocolate chips
1 1-oz. square unsweetened chocolate
1 14-oz. can sweetened condensed milk (not evaporated milk)
1 tsp. vanilla
Soften the unsweetened chocolate in the microwave. Add it to the chips and the milk in a 2 quart saucepan. Melt and mix everything over low heat until smooth. Remove from heat. Mix in vanilla. Scrape into a buttered 8"x8" square pan. Chill until firm, cut into 1" squares. It doesn't have to be chilled after that.
